Try the best of regional cuisine with dishes such as broad beans with chorizo, braised corvina with smoked tomato crumbs and game pie with pine nut rice. The typical partridge soup is perfect for warming up on colder nights.
Try the pork tenderloin with clam crumbs, which is a sophisticated transformation of the famous Alentejo-style pork. The flavors are surprising and the final sensation is one of lightness and absolute satisfaction.
Finish off with an original pine nut tart, an intense toucinho do céu, a light egg pudding or a typical sericaia with Elvas plums.
