When you’re in the Alentejo, you’re far from the hustle and bustle of fast food. You can appreciate every seasoning refined over the centuries. You can enjoy nature’s offerings, simple ingredients and rural cooking. You can pay tribute to the Alentejo’s heritage of olive oil, cheese, wines and sweets.
We take the wild asparagus that grows in the fields of the Alentejo and combine it masterfully with eggs from hens raised in the open air to achieve one of the most delicious and iconic dishes of this region.
We sauté sprouts picked from the backyard, mix them with sun-ripened tomatoes and yesterday’s bread and produce the unassuming ‘migas’, a culinary masterpiece scented with aromatic herbs.
We walk through the streets of the towns, surrounded by a landscape of whitewashed houses, golden plains and the ancestral knowledge of people who work with their hands and with love. This is the Alentejo.
